After a horrible night’s sleep Monday night, I was pretty useless Tuesday morning (8/2) until I left at 11:30 to meet Connie:
for lunch at:
in Waxhaw. We had a delightful lunch:
then headed over to TANGLES to buy some yarn. Good news/bad news on the yarn front…..she only had 3 skeins of the color I wanted….but when she found out she couldn’t order any more….she reduced it to 50% off! I’m going to give it a go and see how much I can get done with the 3 skeins she had (it's got a lot of yardage on it).
Connie and I wandered over to Waxhaw creamery after that, and finally said good-bye after we were done with our ice cream. I’m not sure we’ve ever met for lunch before…and we decided we need to do it a bit more often.
I was totally exhausted when I came home, but just couldn’t fall asleep to take a nap, so I finally got going on dinner. Loree brought in a bunch of garden tomatoes last Thursday, and on Monday I got them all diced and salted and set them to drain in my salad spinner. I got a pie crust par baked before loading in the tomatoes (look how beautifully red and ripe they look!):
then spots of pesto:
then scallions:
and finally the topping of cheddar/mozzarella/mayonnaise:
before popping it into the oven for a gorgeous and scrumptious tomato pie:
Pam came by to share our dinner:
then Michael left for rehearsal while Pam and I settled in with our drinks to solve the problems of the world. She headed home just before 9 PM, and Michael came home shortly afterwards.
*** If you serve your kids frozen pizza or chicken nuggets for dinner....you are a terrible parent. I don't care how busy you are, find the time to microwave them first. ***
